Fruit Jellies: Recipe

With all this fruit we've been getting (from the garden and the Vitatas) there's been ample opportunity for all kinds of fruit-related desserts.
One of the joys of childhood I'd forgotten was the fruit jelly.
Suddenly faced with 2 litres of plum juice from our homegrown plums the other night and no desire to drink it all, I rummaged in the pantry and found some sheets of gelatine.
'Aha!' I thought, and so the first of our summer jellies was conceived.
They're very simple to make.
Take 500 ml of fruit juice, either bought or made yourself by simmering fruit with the minimum of water until soft and then pressing through a sieve. If you use bought juice you'll have to heat it up to help the gelatine to melt, but mine is usually already hot because I've cooked it and pressed it through a sieve. Add sugar to taste.
The jelly pictured is rhubarb and plum, so it needed about 100g of sugar to make it palatable. Add gelatine leaves in the quantity called for on the package. I used 6 leaves for 500 ml of juice.
Stir to ensure that the gelatine is completely melted through and then pour your jelly into moulds.
Here I used thick glasses and filled them with fruit first - bananas, grapes and blueberries. Cover with clingwrap and place in the fridge to set. Overnight is good, but if you are in a hurry they are usually set within a couple of hours.
You can vary the contents to suit what you have in the fridge, and if you're feeling very artistic, make different layers in different colours.
Kids love them and they feel so summery. They're also incredibly good for you. Gelatine is excellent for your hair and nails. Yum.

I love jellies. They are a doddle to make and everyone loves them especially if they are in individual containers.
Thanks for giving me a nudge, I must make some more as we have raspberries, gooseberries and red currants now.
