Recipes for Neil

Neil of Citizen of the Month wants to cook for his lovely wife, Sophia, now that she's recovering from surgery.

He asked for easy recipes from mommybloggers so I thought I'd trawl through my recipe archive and find a few that would be nice for Neil.

The first one, and the most versatile is bolognaise sauce. Neil, with this one you can make spaghetti bolognaise, lasagne, cottage pie, moussaka, sloppy joes - endless possibilities. If there is one recipe you should master, and one real 'mommy' recipe, this one is it.

Next up, tuna pasta salad. This one is nice and light, simple to eat, not too heavy and you can stuff pitas with it which makes it great portable food. Nice and easy to eat whilst lying on the sofa.

Going with the portable food theme, how about some tortillas stuffed with beef, courgette and red pepper?

Pasta with pumpkin, chorizo and red pepper is also awesomely easy - most of the ingredients just go in the oven!

Another oven based recipe, oven-baked chicken pilau - this one is a little rich tasting so it's a good idea to wait until she's actually hungry before cooking this one.

And hey, it's summer, there's no reason not to grill.

Finally, why not make her a cake, or some muffins ...

Good thinking Ash! A real repertoire of never disappointing yummy items! The term mummy-food has a slight denigrative sound to it, but I think these are the kind of things you're looking for when you feel down and out.
