Tortillas with Beef, Peppers and Onions

I'm on Day 5 of my 'plan'. Yesterday was awesomely easy because I did three hours of digging in the garden, earning myself a massive 1000 and something calories and some very sore muscles.
Planting potatoes is *hard* work. The whole time I was shovelling dirt I was thinking of how wonderful the new potatoes would taste when we harvest them in June.
My muscles don't have the luxury of an overactive imagination so they were just ... protesting!
Never mind! The potatoes are planted and I enjoyed using up some of my extra calories. I managed a very low fat day - 19%! - and part of how I did that was the awesome flour tortillas we had for dinner.
I used the recipe that I've used before by Deborah Madison from Liz at Pocket Farm, made the tortillas in a dry pan, then prepared the filling of stir fried beef strips, sliced onion, sliced red pepper and blocks of courgette with a sauce made of about 75 ml soy sauce, two teaspoons of sugar and about 100 ml of tomato paste.
I fried the meat in the same pan, with a bit of olive oil, over high heat until it was nicely browned, then shifted it to one side of the pan and added the slower cooking vegetables like the red pepper and onion and finally add the courgette and then the sauce.
The last minute or so of cooking I put a lid over the contents of the pan, so a lid about 2 sizes smaller than the pan itself, because I wanted the contents to be covered, not the pan - this gets rid of that condensation effect that you get when you put a normal lid on a pan.
After preparing the filling, I shredded some lettuce over the tortillas, then put the filling inside (not too much!), then added home made salsa, and avocado for the Husband, because that's his 'thang'.
Then we rolled up our tortillas and devoured them!
PS. Am I the only person whose children will eat almost anything if it's in a pita or a tortilla?
