It's my birthday ... and I'll eat pancakes if I want to!

I'm 33 today. Wow. Say it with me .. thirty three. Thirty three years. Twelve thousand and forty five days. Two hundred and eighty nine thousand and eighty hours. Hmm. Going to stop counting there!
I'm think I'm happier to be thirty three than I was to be thirty two. Is that weird?
We had pancakes for breakfast, with berries. Yum. From my new Nigella book. I think I must be the last person in the universe to buy Nigella's books, but this little love affair started after reading Feast in Dutch. Then I bought Feast in English, and for my birthday I bought 'How to be a Domestic Goddess'. This is her American pancake recipe. I adapted it to use a mixture of wholewheat and other grains.
Nigella's American Breakfast Pancakes
225 g plain flour (or a mixture of wholewheat, white, spelt etc)
1 tablespoon baking powder (I used one of the Dutch sachets of baking powder)
pinch of salt
1 teaspoon sugar (I used a sachet of vanilla sugar)
3 large eggs
30 g butter, melted and cooled (I used that liquid margarine)
300 ml milk
- Measure the flour into a bowl, add the baking powder, salt and sugar.
- Make a well in the centre and add the milk, eggs and melted butter.
- Plop spoonfuls onto a greased hot griddle/non-stick frying pan/cast iron pan and turn when they start to bubble through to the uncooked side. It doesn't take long. I do the first few on about 7/8 (the dial on my hob runs from 1 - 9) and then turn it down to 5.
- Serve with cinnamon sugar, berries and maple syrup. My berries came out of the freezer last night and defrosted overnight, ready to serve this morning.
As for me, I'm having lunch with a friend, making cheesecake this afternoon, then going out to dinner.
Looks like it's all about the food today. Which bodes pretty well for my 34th year, don't you think?

I can't think of a better way to start a birthday than having pancakes for breakfast! I made them for us on Christmas morning, and when I mentioned it at lunchtime, one of Ken's family members asked why....

Happy birthday Ash! Thirty three was a great year for me and I'm hoping the same goes for you.
I adore those pancakes (do you use buttermilk? They are as light as a feather with it!) Also, make sure you try the ones in Feast, with buttermilk and banana. They are delicious.

Well 33 is nothing yet, you're young and happy! eat your pancakes and enjoy them.....looks good to me for a birthday breakfast. mmm and the look good without a birthday too...:-)
Awww, pancakes for breakfast! Why didn't you invite me? We had a pan-cake fest the other day, made a few different batters, and had a go at it using the table griddle thing I got as a present. We liked the american ones best!
