Tomato and Fennel Soup: Recipe

My vegetable subscription this week contained, amongst other stuff, tomatoes, fennel and a bag of finely chopped vegetables called 'rauwkost'. I don't like rauwkost in it's 'rauw' form, and I had a glut of tomatoes, seeing as The Man is away and he is the principle raw tomato eater in this house. Fennel is my new favourite vegetable for soups, so soup it is!
Before I blather on anymore, here's the recipe:
Tomato and Fennel Soup
Serves 6
7 medium tomatoes (you can use more if you have more), roughly chopped. If it's not tomato season substitute with three cans of good quality chopped tomatoes.
1 medium turnip, peeled and finely chopped
1 large white onion, peeled and finely chopped
1 bulb fennel, root removed, chopped into smallish pieces
150g bag rauwkost or for those of you in foreign lands, finely chopped mixed soup vegetables. My rauwkost bag contained carrot, cabbage, onion and leek. Alternatively just leave this bit out or add a leek, or a carrot or something. Make it your own!
100g cooked rice to thicken. You could add a large potato instead. If you use brown rice you get a lovely nutty texture when you puree the soup.
500 ml vegetable stock from a stock powder. I use Maggi Vegetable stock.
1 bay leaf
20 ml olive oil
salt and pepper to taste
- Heat your olive oil in a heavy based pan and saute the onions, fennel and turnip (and potato if using) for about five minutes over medium heat. Add the rauwkost and stiry fry another minute or two. Add the tomatoes and stir fry until they're softened.
- Then add the stock, bay leaf and the cooked rice.
- Put the lid on your pan and if you're using the pressure cooker, bring to pressure and cook for 30 minutes.
- If you're using a normal pan, simmer over a low heat for one and a half hours.
- Remove the bay leaf and puree the soup using a handheld blender. Season to taste with salt and pepper
- Garnish with grated parmesan cheese and serve with freshly baked bread.

Ooh the perfect recipe. My hubby loves tomato soup, and I've yet to find a recipe that he actually likes. Okay so I haven't made this yet.. but when i do I'll let you know what he thinks.. He's a champion soup taster hehe
