Mustardy Pork and Apples Recipe

Superhealthy 1 of 5-a-day, low fat
4 pork steaks around 140g/5 oz each, trimmed of excess fat
1 tbsp olive oil
2 eating apples cored and cut into eighths, red skinned ones look good
1 onion, halved and sliced
small handful sage leaves, torn, or 2 tsp dried sage
100 ml chicken or ham stock (from a cube is fine)
2 tsp wholegrain or Dijon mustard
- Rub the pork steaks with a little oil and season with pepper and salt to taste. Heat a large frying pan and fry the steaks for 2 mins on both sides until golden. Transfer to a plate. Adding a little more oil to the pan, fry the apples, onions and sage for 5 minutes or until the apples have softened.
- Pour in the stock and spoon in the mustard, then return the pork to the pan and simmer for 10 minutes until the sauce has reduced by about a third and the pork is cooked through. Serve with vegetables and mashed potatoes.
I made this tonight. It was absolutely fantastic so I thought I would share. Cooking and preparation time was around 20 minutes so its perfect for a last minute supper. The mustard and stock gave it a really rich flavour. I served it with fresh carrots and green beans so from one meal we got three of our 5-a-day.

Ooooh, that pork recipe sounds scrummy ... and I've got some pork sitting in the freeze that needs eating ... yup, definitely have to print that one off for an upcoming dinner :)) Thanks for sharing :))
