Jamie Oliver's Raisin Cookies

Ingredients
40g Raisins
75g Butter
40g Golden caster sugar (for Dutch readers, use Lichte Basterdsuiker)
75g Flour, Plain, Average
40g Polenta or semolina
Method
Preheat oven to 150C/300F/gas mark 2.
Whizz the raisins in a food processor for 20 seconds (with chopping blade attached). Add the butter, sugar and then sift in flour and polenta and mix using a dough blade until the mixture resembles a stiff dough.
The recipe instructions say to roll out the dough, but I found it too fiddly to do that so instead I just rolled it into balls, a la home made gingernuts.
Spray a baking tray with baking spray of your choice, then place the cookies (rolled into balls) on the tray, fairly widely spaced. After placing on the tray press down with a fork to flatten the cookies.
Bake for 12 - 15 minutes. If you wanted to you could drizzle with lemon icing made up with 75 g icing sugar and 1 tblsp lemon juice + zest of half a lemon. I prefer them plain.
You can also subsitute other ingredients instead of the raisins, like dried mango, cranberries, or chocolate chips. If you are in Holland and want chocolate chips you don't need to visit an expat shop! Try the chips they use for melting in chocolate fondue - you can get them at Parti or Oil&Vinegar stores, amongst others. If you add chocolate you need to recognise there will be more calories per cookie!
This recipe came from the baking set that we bought for Seb. I thought the semolina/polenta would make the cookies crunchy and it does! They're really tasty.
